  mustard greens-stems and ribs discarded
  bacon slices-chopped
2  Tbsp.
  olive oil
1  tsp.
  minced garlic
1/2  tsp.
  salt
1/4  tsp.
  pepper

Directions:  
Coarsely chop greens, then cook in a pot of boiling salted water, uncovered, stirring occasionally, about 5 minutes. Transfer with a slotted spoon to a large bowl of cold water to stop cooking. Drain greens in a colander, pressing to release excess moisture.

Cook bacon in a skillet over medium heat, stirring, until crisp, 5 minutes. Transfer to paper towels to drain, reserving fat in skillet. Add oil, garlic, greens, salt, and pepper to fat and cook, stirring occasionally, until heated through, 2 to 3 minutes. Transfer to a serving dish and top with bacon.
